Chicken and Black Bean Nachos

Black Bean Chicken Nachos:

Made a paste of oil, chili powder, cumin, paprika, and DP Fajitaish rub. Marinated some skinless bone in thighs for a few hours. Grilled up with onions and Serrano peppers

Built the nachos with blue chips, black beans, grilled onion, shredded thighs, pepper jack, and quesa fresca. Added the serranos to my half

    They were really, really good. Next time I will use more melt-y cheese, the queso fresca is great flavor but it is not a great melting cheese. They needed cheddar or quesadilla cheese to add some grease.

    And I thought about putting the plate setter in and ramping up the temp to finish them off, but I was getting into the golf match so I decided to make another cocktail and use the broiler.
