ONE LEGGED CHEEKIN

I spatchcocked this cheekin  then rubbed it with Mickeys rub using the espresso instant coffee and left it in the frig for 6 hours uncovered.   Put it on the BGE to sear both sides then took it off and put the plate setter in and put it back on the BGE.   Cooked it for 1 hour at 385 till I got 165 on the white meat and jerked it off.  OOPS I created a one legged cheekin.  But OMG it was soo good.  Meat was moist and the skin was crispy.  

Next time I will be more gentle with my creation.  Thank you for the Mickeys rub.
