Spent most of Sunday night and part of the day Monday "working" on my brisket.
Overall pretty good flavor and fall apart tender, but not as big of a smoke ring as I thought there would be.
SWMBO and the kids were pleased and ate most of it!!

Some people are going to think you're nuts complaining about that smoke ring. It's looks pretty good to me. Nice cook.

The smoke ring is just not important unless you are into measuring "things". You have a very good brisket.Salado TX & 30A FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Plus a couple Pit Boss Pellet Smokers.

Thanks! I guess I just "assumed" that it would have more of a smoke ring after 13 hr cook.
