4 Bone Standing Pork Roast for the BIL's Birthday:

I marinated a 4 bone standing pork roast in 2 cups apple cider, 1/4 cup kosher salt, and a  1/4 cup mesquite honey for 24 hours. Made a rub of roasted garlic, sage, ground pepper, and kosher salt. Cooked indirect above a pan of apples, onions, and free stone peaches, in a little apple cider. Made a glaze of Mesquite honey and apple butter. Came out amazing. BIL asked to make reservations, "Same Time Next Year". Really fun cook. Enjoy
