Here is an excellent video showing Mangieri making dough and a margherita at his famous NYC store, since moved to San Francisco. Well worth watching if you're into pizza. Note that the "sauce" he uses is not actually sauce, but tomatoes... and very little at that.



There are a couple of other videos out there as well.
