Roasting Turkey

I have never roasted a turkey on the egg. Spatchcock has been suggested but I've only heard of chickens cooked that way. Can someone share with me how to roast a turkey so I can shave it to make lunch meat? Thanks all!

I would spatchcock and cook raised indirect.
Then remove breasts and run through the slicer. butt If I buy poultry knowing that I want to make lunch meat I always end up just getting the breast.
