Comfort food on a cold snowy day

Latest prediction is 5-7 inches, and it's snowing pretty good now. Gonna do some Pot Roast. Even though the Mrs. offered to stop baking cookies so I could cook inside and not traipse snow into the house, I convinced her the smell of the beef left in the oven would permeate the next batch of cookies, so out to the Egg I go.
Started with a nice top round roast, cut into 2-3 inch pieces and dried (first thing I learned from Julia - wet meat won't brown)

Browned on all sides in a CI Dutch Oven, with a little bit of EVOO, seasoned with S/P

Covered with beef stock, brought to a boil, then reduced to a simmer.

Added some red skinned potatoes, carrots and celery, then out to the Egg it goes. Egg is at 325, indirect.

No top vent, even with the moderate snow. Holding temp nice and steady. Will soon be ready for dinner. I love how the snow doesn't melt from the side shelves. This is about 90 minutes into a 325 degree cook.
