SV Pork Chops - possibly a near death experience

So this cook started on a somewhat ominous foot : http://www.eggheadforum.com/discussion/1159238/funky-smelling-cryovac-ed-pork#latest

Anyways, pulled the chops out at about 18hrs, hit them with a little more of Mickey's coffee rub and fired up the mini.

Once the mini was up to temp, I put the chops on.

SWMBO's went first, about a minute per side, to 165°F. Mine went on for about 30secs per side to 145°F.

Plated with cous cous, and a brussels spouts with leeks side that SWMBO made last night.

Tasted pretty damn good and SWMBO is won over to the SV side. The texture was very different than anything I've had before, but not in a bad way. The meat was very tender (fork tender almost), and you practically didn't need teeth to chew it. It was soft and just slightly more dry than i would have liked in the area furthest from the bone. The meat near the bone was divine though. Next time I will season the meat after the bath, and maybe try to cook it for a shorter time. Since I had to go to work this morning, and we were going to eat this for lunch, starting it up last night worked logistically. 

Overall, I count this as a win... unless we end up in the ER because I poisoned us.
