Drove down to Weddington from Arlington last night. Got in around midnight.
Got up this morning and took my brother in law to pick up my new Large in Kannapolis. It is beautiful. New big sister for Denberg.
Whipped up a brine last night when I got in around midnight. On the gamble that a first time turbo cook would be risky I thought an overnight brine could help offset the fast cook... Maybe unnecessary but did it anyway just to see... Only been on a little over an hour and plan to try and eat around 8. Hoping to get the DAWGS in and out of Nashville uninjured. Never thought I would say that.
Half apple, half hickory over WGWW at 350. Fingers crossed.

Denberg is special. I'm sure the relationship will go well. That said, next time you may want to put an air-gapped drip pan on the platesetter to keep the drippings from a nasty burn. Edit-I see a pan in there-so much for my mid-afternoon vision. FWIW-Louisville; Rolling smoke in the neighbourhood. # 38 for the win. Life is too short for light/lite beer! Seems I'm livin in a transitional period.
