Hope I can get some advice....I've never cooked one of these. I read about putting the roast in a buttermilk/ lemon juice bath overnight to get rid of the gamey taste... wrapping in bacon to add moisture...smoking to an internal temp of 160.
But that info wasn't from this site... so I thought i would check the egg Trust first.
Any other recommendations?
