Never did St Louis ribs before as I always did baby back, and it's been over a year since I even did that. Since I never tried them before and they were $1.50 a pound cheaper at Costco, I decided to give them a go. 3 racks, all rubbed overnight with dizzy dust. I did them about 5 hours just smoke, no foiling. Spritzer with apple cider vinegar a couple times 3 hours in. Dome 225 with Hickory and cherry. Slathered one with sweet baby rays, the other with my homemade guava bbq sauce, and the 3rd left naked. They turned out great and I'll be sticking with them with the price difference and all. Next time I'll just stick with all basted in the guava bbq since they were the favorites. Only had time for 1 pic, sorry.
I served with coleslaw and creamed corn that VI stole from the inmate. That turned out great though I changed the recipe. Used smoked gouda instead of cheddar and half and half instead of cream and water.
