Meatless Monday on a Thursday

I can't remember if I had posted these before or not, so here we go Eggplant, tomato, basil and feta. I cooked at 450* raised direct. First I did the eggplant till they were within 10mins or so of being done then I added the tomatoes image Then once the tomatoes are done I stacked and put on some basalmic glaze, feta cheese and fresh basil from our herb garden image As you can see I had a tomato catastrophe and lost a mater to the fire And a plated pic image
