First Cook, Spatchcock Chicken!

I went to a local butcher that has a great reputation and picked up some ridiculously big filets and 2 whole chickens.


First up is the chicken. I immediately unwrapped them and left them open in the fridge. I have them spatched and split into two halves each.

I put the DP on one and the Redfish magic on the other bird.

And now they are in the fridge waiting for my XL to be delivered!!

The following day, the XL showed up... Some of my goodies laid out for the first cook

Last time she'll be this clean, I promise you that!

And finally the finished product.. no plated pics because we never plated... I was so excited to have my egg that the idea of side dishes completely escaped me! We just ate that chicken... 

Best chicken I have ever eaten in my life!! (wow, this picture does not look nearly as good as it did in real life...)
