Jerky...first attempt...success

I'm on this crazy "Whole 30" eating plan for 30 days. No grain, no dairy, no sugar, nothing processed or artificial. That pretty much limits me to meat, fruit, veggies. I decided to try some beef jerky having absolutely no idea what I was doing and not bothering to do any research at all. 

-Cube steak (pounded out very thin)
-salt and pepper (heavy on the pepper)
-sit uncovered in fridge for 24 hours
-cooked indirect at 190-200 for around 6 hours

This stuff was really good. I'm sure there are plenty of better ways to do it, but as far as effort vs results, this was a winner. Already planning to make more. Not sure why the plated pic looks black. Iphone I guess. 

Also, everyone already knows this, but the Egg is amazing. Never moved more than 10 degrees in 6 hours, even at 190.
