Got 2 Top Round steaks from Costco and am looking to do a London Broil. Each piece of meat is 2.1 lbs. and already been marinating all night. Anyone have any good tips on how to do this on the egg? Was thinking to sear at 550 for 90-120 second each side, then just close the dampers and let it go till internal temp of meat reaches 130. Is this any good?
Also, anyone know how long it will take to get a 2 lb piece of meat to 130 once I close the vents down?
