Bacon wrapped stuffed pork tenderloin

Butterflied a tenderloin and stuffed with spinach, green onion, garlic and apple. Wrapped with maple bacon. Will post ready to eat pic in 90 mins!

    Looks bacon-y good.   I'd cook it direct, trick is to render the fat from the bacon but not cook the tenderloin more than 130-135-ish.

  • And done! Nolaegghead, did it indirect 325 dome for 90 mins (140 meat temp). Bacon was mostly crispy - maybe more heat right at the end.
