Dry Aging Beef at Home Article

I sometimes purchase dry aged beef from H.E.B. but so far I'm not convinced that it is worth the additional price. Tastes a bit 'gamey' to me.

But I'm intrigued by the aging process.

An Egghead friend sent this link to me and I found it rather interesting. I thought some of you would too.
