Need some guidance. Want to cold smoke some sausage this weekend.
How are you keeping the temps down into the 100-150* range on a lg? I have some hardware cloth(1/4") to put pellets in like the a-maz-n smoke tube.
Not sure how hot that will get the egg. Also thought of a small fire inside of a coffee can and lay the tube across it. Last time I tried my old gas smoker and the casings didn't stay smooth.
Also how long to let them smoke?
