Success in the sophomore effort: cured loin

This was the center of a great meal. Same maple cure as last time but instead if the bigger shoulder this went into a 2.5 lb loin roast. I find it still takes longer in the cure than Rhulman suggests. Otherwise, this is fantastic. The small piece is quick to cure, takes up far less space and scales easily from dinner for 4 onward.
