Question about prepping long table for large egg

So I have already stained the long table a darker stain.

But would it be advisable to apply a coat of polyurethane to make it easier to clean up and keep grease stains from forming.

Are there any downsides to doing that? It seems like when I had mentioned that to a couple salesmen where I got the egg, they had never known anyone doing that before.

    Straight polyurethane yellows and cracks outside.  Helmsman makes a Spar urethane that's designed to be sun and weather resistant.  It is advisable to use it to retard stains and discoloration from the sun and water.
