To be or not to be.....Smoked Hamlets
Cured and brined a couple of 2 pound pork loins for 48 hours. Let them set uncovered in the fridge overnight to dry. Smoked indirect at 225, cherry wood, to IT of 150. Turned out great. They went well with the Christmas morning Mimosa's.
