Ok...I'll follow the cured egg yolk thread up with some egged food. We had some company tonight and the first course was the salad shown in that thread...I brined some thick boneless loin chops using one of the brines in the Ruhlman book...
Seared down on the spider and finished on top of AR, t-Rex style (with a handful of peach chips for smoke during the roast stage)
Did a foil tray of cauliflower and puréed in food processor with a little Parmesan cheese, sour cream, and milk.
Plated up with a maple/ale/mustard sauce
