So for an example, when my egg thermometer reads 500 lets say, is that the dome temperature and the grid is a little hotter or is that the exact temp within the egg? Sorry for the dumb question but its something I have been wondering. Thanks, J.J.

When the egg temp reads 500, your grid temp will be a little lower. It becomes more pronounced when you cook indirect. The temp difference is usually between 10-50 degrees. Mine is usually only 20 or so.Be careful, man! I've got a beverage here.
