Followed Nibble Me This's recipe for fajitas' tonight. Thanks Chris.  It turned out real yummy. Mama was happy. Griled at 450, direct. had the skillet pre-heated and the peppers and onions did real well on it. Very happy with results. We both said that this should be a weekly regular. Thanks Chris.

    Looks good! Have you ever tried skirt steak instead of flank? More tender IMO. Love me some fajitas!

    Ditto the flat iron. Tends to be pricier than skirt here.

    I used flank for a while until I tried the skirt. Still good but noticeable change in tenderness. My wife makes a home made guacamole as well. Now you got me hungry!

    Salado TX Egg Family: 2 Large and a very well used Mini, added a Mini Max (I'm good for now). 

  • Skirt steak was the original fajita meat.  It was a really cheap cut of meat, until the gringos learned about fajitas.  Then, the price shot up.  I agree with the others that flank is not the best.  Flank is great on Asian stir frys, but not for fajitas.  I use flap steak now.  It is just as tender as skirt, but not nearly as expensive.
