I'm smoking some bacon today. Most everything I've read says to smoke it at 200* until it reaches 150. I can't get my egg below about 250*. I hooked up the digi q so I could close the dampers and "force" the air to keep the fire going, it's just running hot. Is this going to over cook the bacon? I'll still go to 150* but what about the outside?
