goat thigh roasts in wine and lime juice, how long?

I'm going to cook two goat thigh roasts, about 2.5 lbs. each, low and slow on the egg. I'm planning on marinating them in white wine, garlic, lime juice and olive oil. How long should they marinate? I plan on putting them on late morning for an evening party. I didn't know if over night would be too long. These are young goat thighs.
