Spatchedcock chicken and mustard

The chicken is in the fridge, waiting to be cooked tonight. Was planning to use evoo before the rub. But was wondering how mustard would work on chicken. Anybody ever used mustard? How does it turn out. I do know it worked great on BB's.

I have found (for me) the less wet you put on that chicken the better the skin. I do not use oil, just the rub. I also cook high in the dome and direct. I just like the skin that way.Salado TX & 30A FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Plus a couple Pit Boss Pellet Smokers.

Well I did try the mustard on one and evoo on the other plus the rub. Both turned out excellent. I believe the mustard gave it a golden look buth the taste was similar. I have pics and will post when I figure out how. I posted pics once before but can't remember what I did.Eggo in N. MS
