how do you keep the heat?

I just got into this egg thing and wonder how do you set the coals?  I am going try the brisket cook and wonder how high do you fill for a12 - 18 hour cook?  When do you check or do I need to stay up with my old friend "Jack" to keep the heat at 225 for an overnight smoke?
