1 whole venison tenderloin
1 package of good applewood smoked bacon
Dizzy Pig Red Eye Express Rub
Season the tenderloin with redeye express rub.
Wrap tenderloin with applewood bacon leaving no exposed tenderloin.
Start BGE and set to cook indirect using a placesetter. Place a pan half full of water on placesetter and heat to 425 with grill in place.
Place bacon wrapped venison tenderloin in egg and cook till 140 internal temperature. Takes 35 mins or so for a small to medium Tenderloin.
