Pork Butts

My first overnight cook. Two 7.5 lb Butts rubbed with Dizzy Pig Swamp Venom. Put the Butts on about 10:00 pm Egg temp hovered between 225 and 260 in the morning around 7:00 it was at 210. The Butt Held at about 165 for a long time then this morning about 9:00 the Butts hit 195. Pulled them off at 196 double wrapped with foil put them in a cooler with towels. Everyone is coming over about 2:00. We will pull the pork around 1:00. The little piece I tried was real good and the Butt was very limp when I picked it up.

Those look picture perfect. And in this case limp is good. Heheheee.
With enough insulation in the cooler (like newspaper balls or towels) the meat will stay hot a good long time. You could check it at noon to see if the foiled pouches need a 30 minute bump in the oven to keep it above 150°.
If I were you, I'd wait for everyone to get there before doing any pulling. There is no better way to show off.Happy Trails~thirdeye~Barbecue is not rocket surgery -

I agree with thirdeye...WAIT until everyone is there AND THEN start pulling......it won't be too hot, it WILL taste great AND you will look like the pitmaster you are...
I did the same thing 2 weeks ago, and pulled right in front of everyone and served, it was the best pulled pork any of us have ever had! Job well done! -

Pulled the meat out of the cooler at 2:00. It was so hot with the vinyl gloves on so it didn't cool much. This is one of two platters. Notice the little ends on the side for the cook!!

It tasted GREAT!!!! Held in the cooler for almost 5 hours.
