Daddy's Day Rack o Lamb

I don't live near a Trader Joe's (thankfully as it would be hard on my wallet). Yesterday I was nearby one and spent more than I should have. Saw a nice rack of lamb, some fingerling potatoes, sugar snap peas, and frozen coconut shrimp (for my non-red meat eating daughter). Cooked the lamb with DP Red Eye Express, seared at 600, roasted at 425. Roasted the fingerlings at 425 with EVOO, minced garlic, thyme, lemon juice, salt and pepper. Here they are about to come off the grill.

Awesome! That's what my wife wanted...she called on her cell from the market and said "Does $37.99 a pound sound about right for French cut lamp chops?" I said "nooooooooo."
So we grill up pork for $2.99 a pound. :laugh:
I would have preferred the lamb...yours looks delicious with Red Eye Express, yummmmmm. -

$37.99 a pound is OK if it included someone to cook them also. :laugh: :laugh: -

Very nice plate. I've yet to try lamb but after seeting this, I'm anxious to try.
