herb stems on hot coals ?

Is there any benefit to adding leftover stems etc from after I tear the leaves off fresh herb sprigs to the top of the lump, just before food is added (or at some point during a cook) ?

I imagine they are too tiny to do any good & will just disintegrated in seconds, but fresh herb stems are soo fragrant- I hate to keep tossing them out.

Is there anything else people ever add to the lump coal for flavors (besides wood chips/ chunks) ? I know burning citrus peel is truly gaggy... and I'm not trying to turn the coal bed into a composter by any meals- just curious if there are any additional uses for any food scraps or flavorings that you don't normally think of using.
