I am going to do 7 or 8 beef ribs tonight. They are marinating in home made barbeque sauce right now. I am going to cook them at about 225 but am wondering how long and how do you tell if they are done? I can't really put a wireless thermometer in them.

If they are a full slab figure 5-7 hours depending on the amount of meat. If they are individual 3 1/2-4 hours should work.

Ribs came out good. 3 hours at 225-250. Left the lid closed and turned them once at 1 1/2 hrs.

Looking Good!
