Cooked a couple of 1.25" thick pork chops and a couple of jalapenos tonight. Marinated the chops in some Montreal Steak Seasoning, olive oil, worchestershire sauce, soy sauce and raspberry chipotle sauce.
Pulled them off when they hit 170*
They were great!

Got to love thick chops. I pull mine between 138F to no more than 150F IT. :P

Gotta get me one of those Craycort's. I pull mine at ~140* too and let rest. Nasties are gone at 137*. Anything more than that makes it tough. Pink pork is okay.
