Spatchcocked Chicken with Freds Tasty Licks Rub

I finally got in a cook! Susan picked up a little ol' chicken that weighed in at 7.8 pounds and I decided that spatchcocking was the way to go.

I put Fred's Tasty Licks, Regular rub on the inside and then used it in a 3/1 ratio with corn starch on the skin. The first bite off the thigh has a distinct crunch and tasted fine.

Ain't she purdy!

Added some mashed potatoes and some sauteed asparagus and had a darn nice meal.

The leftovers are going into a chicken salad tomorrow. YUM!
