Game hens, an easy cook

Squash on the small while the large was busy with game hens.

This is so easy. Load up the egg with lump and mix in some pecan wood. Setup is indirect-I used a raised grid and a drip pan. Get the fire going and bring the egg up to 350 dome. Rub the skin with shortening so the seasoning will stick to the skin. Set the chicks in and let the dome temp go up to 400 degrees. Cook for about 45 minutes or until 175 in the thigh. And then it's time to eat.



It's maple syrup making time. This is a home-made setup a farmer has near where I work. I buy my syrup from them, it's very good.

There is andirty jobs on disovery where they go to a syrup farm, very interesting to see he process. -

Thanks, Clay...as usual your food pictures made me slobber on my keyboard! Cornish game hens are a favorite of ours too and of late I've just been splat cocking them for a perfect cook every time.
