Brisket

Can't seem to find my notes on brisket. Got a 5 lb flat.. About 6-7 hrs at 225?? Haven't cooked one in a year or so and oldtimers kicking in lately

Sounds about right. Don't discount it finishing earlier either, since it's not a whole 15# piece of brisket, the stall may be small, if any.
I find, in my very limited experience, smaller pieces of shoulders, briskets, etc. tend to take about 1hr per pound here, @ 250*, roughly. I only use it as a guide as to the approximate finishing time - of course one should always cook to temp.
