I have a Beef Shoulder roast. Long story short; I refuse to put it in the crock pot. I'm thinking about wrapping it in bacon and going L&S at 225* and letting my Xl have its way with it. Dizzy Pig mandatory. foil at @ 165*.Pull and rest at @ 195*-200*. Pulled Beef??
More meat please !! :-)

Not sure of the cut, but is there a lot of fat to take the low slo or will it be dry and tuff?

There is not much fat. I was sorta hoping the bacon would help it out. Without at least the bacon i'm pretty sure It will dry out. It looks like it would make a decent pot roast.( 2 Lb )More meat please !! :-)
