cause were goin to a dessert concert later. I mentioned earlier about wanting a toasted sammie. Seeing Molly's only made it worse. I decided to do blackened tilapia po'boys.

I simmered butter with a clove of garlic sliced up in it and used it to brush on the hogie buns before toasting. I also brushed it on the fish before putting the blacken seasoning on.

bought stuff for guacamole as a side with corn chips.

Made some nice slaw to go on the sammie too

enjoy, I know I did

Hey JoJo. Your sammie's look tasty. I think Molly is getting everybody going on the sandwiches. :P
I've been wondering about you. They are telling on the news there were two tornado's that touched down about 40 miles from here. Otherwise we are fine.

Were ok. There was a lot of high wind, trees down, sheds flipped over, and fences down but no known injuries. Thank God

This one was my small egg. I took out the fire ring because I have legs that raise my grid and I needed to get closer to the fire. It's perfect for my 12" ci skillet. I've done it on the large too at regular grid height.
I actually needed more heat. I was using some old lump with some new added to it. should have only used new. -
I have a bag of tilapia in the freezer, and hope to duplicate. Thanks!Southlake, TX and Cowhouse Creek - King, TX. 2 Large, 1 Small and a lot of Eggcessories.
