another tri-tip and some sweet peppers

so, tri-tip is hard to find down here, so when i see them, i usually buy two. the family loves cow, so this isn't a problem with them.
i seasoned the tri-tip with a heavy dose of sea salt, some dizzy pig raising the steaks and some dizzy pig red eye express. i got the egg up to about 650 and seared it low on the spider and then put it on top of the adjustable rig and knocked the temp back to 350 until it hit an internal of 140 and let it rest for 10 minutes. had mini sweet peppers and a nice salad on the side.....

Beuatiful! I get tri-tip by the case up here in MD. My local chain stores don't carry them so I have to have my butcher order them for me, but I have to buy them by the case.

Lucky you! We hardly ever see tri-tip, and when we do it is very expensive.... Yours looks fantastic!

it was pretty expensive, $8.19/lb. -
OUch! About the only place we see it around here is The Fresh Market - usually aroung $6/lb. We enjoy it and though we gripe about the price, it's worth it. As soon as I'm able to take a day trip (recent knee surgery) I'm heading to your area - still have not been to Rouse's and also want to check out the new Grate, Grills and More location.

Looks yummy. Thanks for posting the pics and the cooking technique. I have not had a good tri-tip since we left CA. Our neighbor was from Santa Rosa, (the tri-tip capital of the world ) and could he cook a good tip.
They are not easy to find here either, sometimes Costco has a few in the meat case.Large, small and mini now Egging in Rowlett Tx
