Feeling Crabby Tonight!

Well last night I made crab cakes and didn't eat any because I was too full from the oysters! So today I was hungry for crab and went to Costco to buy more crabmeat and this was the crab fest that resulted.
Not super lump to me, but what do I know? (Yesterdays was lumpier!)
The egg with the sun setting behind:
First, crabmeat and spinach stuffed mushrooms.
Sauteed some butter, red onion, fresh garlic, fresh spinach, added in some mozzarella, some parmesan, S & P after taking of the heat, and the CRAB. Stuffed into some good sized mushroom caps.
30 minutes at 350 with the platesetter.....
Next I made two crabcakes. I can't stand the crabcakes you get here in FL restaurants, they are mostly breading. So I make mine with no bread crumbs, just a little egg white and flour to bind it together. I used Old Bay, cayenne, chopped red onion, and capers. That is it.
No pics of it cooking, but a pic of it plated this time.
Onto the main course, with CRAB.
Mojito Fish, in this case, tilapia. Hey, I like this fish, it is a mild, flaky fish ....don't you judge until you have tried it! (plus it's $2 a lb. at Rest. Depot if you get it on sale!!)
I dipped the fish in some flour seasoned with S & P and some DP TSunami Spin.
Then onto a hot CI Pan in the egg, with some EVOO in pan.
For the sauce, I sauteed some red onion, and fresh garlic with some more butter. Add in fresh mango chunks.. fresh mint, lime juice, oh and the most important ingredient.....
Coconut rum! For all you safety peeps, the bottle only had about 1 1/2 oz. rum left in it..... I have no idea where the rest of it went!!
Add in the crabmeat at the end to warm....
Plated with the crabcake....
OK, I might be crabbed out for awhile now!

That looks very tasty. Your shrooms look better than the ones I did last night, but I didn't think about adding spinach. Thanks for the inspiration. Now that I like shrooms I will try your mix next time.

Molly, I am surprised you can't find lump crab in your town. It's pasteurized and lasts for about a year in the can, so it should be available almost everywhere.Happily egging on my original large BGE since 1996... now the owner of 5 eggs. Call me crazy, everyone else does!

dhuffjr, no mayo here. Just some beaten egg white and enough flour to hold em together, and whatever spices you like, and capers. Last night I made 7 crabcakes out of the lb. of crabmeat, and they were nice size. I am boycotting eating crabcakes out from now on!Happily egging on my original large BGE since 1996... now the owner of 5 eggs. Call me crazy, everyone else does!

We had one the size of a dinosaur egg at Carmines in the Ybor city when we visited Tampa. The waitress raved about them. It wasn't bad. I was surprised at how much crab seemed to be in it. I suspect there was some mayo in it but I couldn't taste it so it was tolerable.
Yours makes me want to go buy a can of lump crab. Is there particular brands that are good or bad? -

I have been to Carmine's, but did not order the crabcake. I never order it out anymore as I am now a crabcake snob, apparently.
I purchased those two cans of crabmeat at Rest. Depot and Costco, and for the same price, $14, in the refridgerated section. It seems you can't go wrong on the brand, just as long as it says lump, or super lump. If it doesn't then you are just getting the same stuff thats in the cans in the tuna fish isle.Happily egging on my original large BGE since 1996... now the owner of 5 eggs. Call me crazy, everyone else does!

Wow, Faith! I always like looking at your posts, it reminds me of growing up on the Gulf. If I could make some crab cake like that, I don't think I would order them out either. Now you got me thinking crab might be on the menu some time this week. Just got to find some that looks affordable. Thanks for posting those pics up.

Susan, yes, cooked it in CI. We ended up eating the whole 1 lb. can of crab. My friend said it was the best crab cake he has ever eaten.Happily egging on my original large BGE since 1996... now the owner of 5 eggs. Call me crazy, everyone else does!

Really nice cooks. I use a very little bit of panko in crab cakes but flour might be better.
