Congrats to the Green Bay Packers, Super Bowl Champions!!! :woohoo:

I'm feeling mighty fine right now.
After resting and ready to slice, anticipation...

Let the slicing begin, I went for the point...

Oh boy, oh boy, oh boy....

Good timing, we sat down at half time to dive in...

Juicy, tender, sweet smoked with pecan, a little spicy complements from Dizzy Pig rubs. Bark could have been more crusty but in all other counts I'm mighty happy. A win, win situation!

I must say one of the better looking briskets I have seen in a spell! If I ever get off I need to do one. Always do one each winter but so far haven't had time. Very nice.

I'm off of work today, ha ha....and I'll be cookin up breakfast as soon as I'm done with my espresso. Brisket-n-eggs!!! Toast, orange marmalade jam, and more java is on the menu this mornin.

I've never seen a brisket look that good as the first few pics. Juicy as all getout!

Go for it, use the 'Fast Brisket' recipe with a foil stage. It works! :cheer: My brisket took 6 hours. :huh: Incredible but true. Sure beats 16.5 hours, especially when I don't have the time to cook all night and half a day. And I got this mammoth done on time for half time eats. Perfect, perfect, perfect. The only down side is the lack of a good crusty bark. Vidalia1 cooks direct to finish and gets some searing crust. He came up with the fast brisket recipe, what a guy!!

Juicy and tender it is! The pecan smoke, mild and sweet, Dizzy Pig rub, excellent flavors with a great beefy richness of the meat. Of the 4 briskets I have cooked this is my best effort without a doubt. Going to drop some in a pan for breakfast with eggs, I think I'll be eating on this all week, this was a huge chunk of beef.

It is and I'm off of work.

I'll be home designing and building a small egg table today in my workshop. Super Bowl winners deserve a day off, right?

Thanks, it is super juicy. Yeah, there is a foil stage and I took this mammoth to 199 internal before I rested. Got some nice beef juices saved as well from the foiling. Super nice smoke ring, the pecan wood from vidalia1 was great. Dizzy Pig rubs were perfect. So happy this turned out as well as it did, brisket is my most difficult cook. Now I'm feeling much more confident.
