Yeah, eggheads are the best and Kim is one of the best of the best.

I have never used pecan but I always hear it is good. My kids are in Alabama (lots of pecan there). How big are those logs?Dave San Jose, CA The Duke of Loney

The logs are perfect sized, on average 2" to 2.500" wide by 1.500" long. Some longer ones in there if I need them but I like to disperse 2" size chunks when going low and slow smoking.
Pecan and Hickory are my favorite woods for smokin and pecan being lighter and sweeter in aroma is versatile for many different meats including seafood. If you got pecan for smokin, your lucky.
