Stuffed pork loin

Did this stuffed pork loin roast last weekend. It came out just delicious! Lost the pics of the sliced and plated finished product though.
As JL would say, the raws.
Sauteeing the mushrooms, shallot, garlic and red pepper.
Cooking libation inspired by Frank from Houma, a Salty Dog, made with grapefruit from a neighbor's tree.
Layered with Italian ham, veggies and aged Gouda.
Rolled and tied and sprinkled liberally with Richard Fl's Indian River Pepper blend, one of my favorites.
Cooked at 350 for about 30 minutes, until 130 in the center of meat. Threw on a giant sweet potato as well.
This came out just wonderful, so sorry I don't have sliced pictures as it was beautiful to boot! Think I deleted them somehow, maybe it was the Salty Dog. Thanks for looking!

You are correct! That looks good....Salado TX & 30A FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Plus a couple Pit Boss Pellet Smokers.

That is one of my favorite cooks!! I like to wrap the whole thing in Bacon. Yours looks terrific, good job! :ohmy: :cheer: :cheer:

Thanks! Thought about wrapping it in bacon but was trying to keep the calories down . I have a tile in my kitchen that has your tag line on it!

Looks good! our jar of Indian river is almost empty plain pepper just does not cut it after having that for awhile.
