Got my XL Egg about a week and half ago and the first day I did a steak on it. Turned out okay, didn't let the lump coal get fully hot so it had some of the lump coal taste. Still turned out pretty good though. Did two drunken chickens yesterday and they turned out okay but I didn't get them cooked all the way. Had to put the legs and wings in the oven. I knew not to believe the poppers but believed it anyway. Still turned out excellent and I'm learning everytime. Thanks for all the tips on this web site!!

Sounds to me like you've learned the same lessons I had to learn the hard way ('cause I'm too stubborn to learn from other's mistakes) ....

[li]Get either a good thermometer or remote (like the ET-732) and use the temperature as an indication of done-ness

Congrats on the XL egg (I bought my XL this past summer and love it) and like srq2625 said, it's an absolute must to check "doneness" with a themometer if you want great food every time.Packerland, Wisconsin

Do a search on Thermopen. It's the best $80 you'll ever spend.

That's the scary thing, I bought one and used it once to check the temp. then for some reason I didn't use it to finish up with. Has to be the head cold that I have!! making me do dumb things. I will know better next time..
