Has anyone done pork cheeks? I think I may be able to find them at a local meat packer. How do you fix them? I had veal cheeks once and they were amazing, but very slowly braised.

Patty, I've had braised pork cheeks with creamy polenta at Babbo, Mario Batali's place in Greenwich Village. They were yummy. I'll check my Batali cookbook when I get home to see if he has a recipe. I remember the sauce was delicious.

He did them on Iron Chef recently. Thanks.
