Poblanos with Ranchero Sauce

Hadn't posted much lately, but thought I'd throw in a food pic. Poblano boats with ground pork, onion, garlic, mushroom, squash, and black olive...smothered in ranchero sauce. Beans are cooked with horno dried Chicos from Taos, New Mexico. Followed the home-made signs that said "Chicos $8" and finalized the transaction in some guy's living room. They are fantastic.

I think my wife would like those. Here in Atlanta they try to serve those little bitty peppers but those look nice sized.

Yep. Called me 3 times while I was in Academy yesterday. And, I promise you never, never want him to call you while you are in the grocery store! And, he just called me and is on the phone as we speak. So much for my lunch hour.

Dried chicos....those the rock like cornamibobs? I got some with the chiles I ordered last year.....sitting in the cabinet getting harder yet :huh:

Throw a handfull in your next pot of beans at the beginning of the cook. Don't soak the beans...just salt pork, garlic, beans and the Chicos. If they are really authentic Chicos, they will give the beans a great smoky flavor. I'm hooked on them. Here's a good article.
