Beef ribs tonight!

I have a great butcher. He trimmed a couple of bone-in rib roasts today and sold me the ribs. He knows I love them. What a great guy.
A little of this and that. 50/50 to be exact.
On the egg at 250 with Ozark Oak and some hickory chunks
six hours later
Juicy and tender as they could be!
My box of Carnivore sauce arrived from Big'un tonight, so I used his Carnivore Sweet as a dipping sauce. Holy Cow! Good stuff!

Wow! Your post got to me. :P I haven't done beef ribs and I seen you used a sweet rub. I love using sweet rub mostly cause I don't sauce much. I'm just going to have to go out and get me some beef ribs. :P

The turbinado sugar works great with the Dizzy Pig Cow Lick. A little sweet, a little peppery. I use it on briskets, too. IMO, it really lets the beef flavor shine. :P

Looks like Fred's class tomorrow is going to be subject to snow in our area. Not a lot in the forecast, but maybe enough to make things messy.
