NYE Pastrami

A friend of ours requested a pastrami for NYE. He bought the corned beef and brought it to me on Wednesday afternoon. I soaked it for about 40 hours, changing the water every 12 hours. Used Thirdeye's meathod, you just can't beat it! It was a huge success last night and I also made Pig Candy which everyone is now obsessed with. Fiance woke up this morning asking if there was any left!

Soaked, rubbed and into the fridge for a few hours.
