The Cuban-style pork butt (Lechon Asado) I served on New Years' Eve was presented as a straight-up plate and fork appetizer with Mojo on the side; as well as part of a more elaborate Cuban sandwich known as Media Noche ("Midnight Sandwich"). The Cubans actually serve this on a very dense bread and the sandwich is pressed like an Italian paninni. As a party or deuver, I chose to serve it on lighter potato rolls and sans any pressing. Healthy squirt of Mojo
Sliced pickles and pickled onions (bread and butter style)
Swiss cheese[p]I smoked 17 lbs. of butt for the party. We had 42 people starting at 9:00, and a bunch of other H'or deuvers and the pork was gone when the company had all left by 2:30.
